Fresh fruits and berries are popping up everywhere and it’s time to pull out your favorite fruit recipes! With the temperatures rising, now is also a great time to enjoy some cool fruit desserts. Here are a few of our favorite recipes. Have fun making them your own creation!

Blackberry Lasagna

  • 8 oz. cream cheese
  • 1/3 cup sugar
  • 8 oz. whipped topping
  • 1 box vanilla wafers
  • 1 pint fresh blackberries

Using a mixer, blend cream cheese and sugar until smooth. Fold in whipped topping.

Place a layer of cookies along the bottom of a dish. Cover with ½ cream cheese mixture. Top with ½ blackberries. Repeat layers. Refrigerate 4-6 hours before serving.

Pineapple-Cherry Fruit Crisp


  • 4 cups fresh pineapple
  • 2 cups pitted cherries, halved
  • 1 tbsp cornstarch
  • 2 tbsp sugar
  • Pinch of salt


  • 1 cup Sunbelt Bakery granola (any variety)
  • ¼ cup brown sugar
  • ¼ cup chopped pecans
  • 1 tsp cinnamon
  • 2 tbsp coconut oil, melted
  • Pinch of salt

Preheat oven to 375 degrees and grease an 8” square pan.

Place filling ingredients in a large bowl and stir until combined. Pour into baking pan.

Mix granola, brown sugar, pecans, and cinnamon in medium bowl. Next, pour in coconut oil and add salt to taste. Once combined, place topping over fruit filling. You can add more coconut oil as needed.

Bake the fruit crisp for 30 minutes, or until topping is golden brown and fruit is tender.

Strawberry and Blueberry Trifle

  • 1 box instant vanilla pudding
  • 2 cups milk
  • 8 oz whipped topping
  • 1 pound cake cut into bite sized pieces
  • 1 lb strawberries, washed and sliced (reserve one whole strawberry for top)
  • 1 pint blueberries, washed

Whisk together pudding and milk in a medium sized bowl and let sit for 2-3 minutes for pudding to begin to set. Fold in whipped topping until blended.

In a trifle dish, cover the bottom with 1/3 cake pieces. Add 1/3 each of strawberries and blueberries on top of the cake, then smooth on a layer of 1/3 pudding mixture. Repeat layers twice. Place the remaining whole strawberry on top with a few blueberries to make a beautiful (and easy) spring dessert!
