Chocolate Granola “Cake” Balls

Ingredients:

  • 1 cup peanut butter, smooth
  • 2 ½ cups of your favorite Sunbelt Bakery granola cereal
  • 1 tablespoon of honey or molasses
  • 1-3 teaspoons of milk, as needed
  • ⅔ cups of shredded coconut (optional)

How to:

Combine all of the ingredients except the milk in a large bowl until blended. Add the milk until you’re able to easy roll into 1 inch balls. Place the balls on a parchment paper-lined cookie tray. Refrigerate for one hour to set. Dive in!

(Makes approx 16 balls)

Lemony Cake Trifle

Ingredients:

  • 1 cup of angel food cake, crumbled
  • 1 cup of berries (strawberries, blueberries, raspberries, blackberries)
  • ½ cup of lowfat Greek vanilla yogurt
  • 2 tablespoons of lemon curd

How To:

Mix the Greek yogurt and lemon curd. Set aside.
In a small mason jar, spoon in ⅓ of the yogurt mix. Place ⅓ of the berries and top with ⅓ of the angel food cake.
Repeat the layering until all of the ingredients are well mixed.
Let the trifle set in the fridge for ten minutes before enjoying.

Apple Pie in a Bowl

Ingredients:

  • ½ cup of Sunbelt Bakery granola cereal
  • 1 large apple, any variety, peeled, cored, and diced
  • ½ tsp of cinnamon
  • ⅛ teaspoon of nutmeg
  • ⅛ teaspoon of cloves
  • ¼ teaspoon of lemon juice
  • raisins, optional

How to:

Mix all of the ingredients except the granola in a microwave-safe bowl, blending very well. Place the bowl in the microwave for three minutes, stirring every minute to ensure equal warming.

Let the apples sit for two minutes. Sprinkle with granola. Dig in!
